Not a bad letter, I would change it slightly as some of the grammar is incorrect (well, I feel it is, sorry ) for example where you have written
"It is with regret that with this letter I tender my resignation from your employment, and are therefore giving up my post of Sales Assistant, observing "
I would actually put
It is with regret that with this letter I tender my resignation from your employment, and therefore I am giving up my post of " it just reads better to me
